Bruschetta is an antipasto (traditional first course) from Italy. It is basically just grilled bread, garlic and olive oil. For the topping you could actually have anything you like but the most common toppings are tomatoes, ham or salami, vegetables or cheese. “Bruschetta Pomodoro”, which is the one with tomatoes on top, is the most popular variation. It´s an easy and quick snack especially for hot summer days and also a very nice first course for your next barbecue.
Ingredients:
For 6
pieces:
6 slices of white bread
2-3 handfuls ripe cherry tomatoes
1 bunch fresh basil
1 tablespoon olive oil
1 teaspoon balsamic vinegar
2-3 cloves garlic
salt
pepper
Preparation:
The
topping:
First, wash
the tomatoes and then chop them into quarters. Then chop the basil leaves and
crush the garlic. Mix it all together in a big bowl. Add the oil and the
vinegar. Lastly, salt it heavily and add pepper at will.
Slice the
bread into one centimetre thick slices. Toast the slices until lightly brown on
both sides and put the tomato mixture on top.
You can
also cut a clove of the garlic in half and rub it over one side of the toast (instead
of crushing it and mixing it with the potatoes) and then brush the bread with
the olive oil (instead of mixing it with the potatoes). This helps to keep the
bread from getting soggy from the tomatoes and is also the traditional way of
preparing Bruschetta. However, personally I think that exactly this sogginess
is the best thing about the dish.
Enjoy your delicious, complex in taste, although simple in preparation, healthy (and
vegetarian!) mouth-watering Italian dish!
